Shrimp and Tomato Risotto Recipe

Instructions

  • Warm the olive oil in a large pot or Dutch oven over medium heat.
  • Cook until the onion and garlic are softened, about 5 minutes.
  • Stir in the Arborio rice to coat it with the oil.
  • Cook for 1-2 minutes, or until the rice has turned translucent.
  • Stir in the white wine until it is completely absorbed.
  • Stir in the diced tomatoes to combine.
  • 1 cup at a time, add the broth, stirring constantly and allowing each addition to absorb before adding the next.
  • Cook the rice for 20-25 minutes, then add the shrimp and cook for another 5 minutes, or until the shrimp are cooked through.
  • Season with salt and pepper to taste after adding the Parmesan cheese and butter.
  • Serve right away.
