Sticky Rice with Mango, Figs and Sesame Seeds Recipe

This sweet and nutty sticky rice dish is ideal for a snack or dessert. It's a delicious and filling treat thanks to the combination of fresh mango, ripe figs, and toasty sesame seeds.

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Instructions

  • Rinse the glutinous rice in cold water until it is clear.
  • In a pot, bring the rinsed rice and 2 cups of water to a boil.
  • Reduce the heat to low, cover the pot, and cook for 15-20 minutes, or until the rice is tender and the water has been absorbed.
  • Over medium heat, combine the coconut milk, sugar, and salt in a small saucepan.
  • Stir until the sugar dissolves and the mixture is thoroughly heated.
  • Remove from the heat and set aside for 5 minutes before fluffing with a fork.
  • Pour the coconut milk mixture over the rice and mix well.
  • Gently combine the diced mango and sliced figs with the rice.
  • Serve warm or at room temperature with the sesame seeds sprinkled on top.
