  • Prep Time: 10 minutes
  • Cook Time: 50 minutes
  • Total Time: 1 hour

Instructions

  • Warm the olive oil in a large saucepan over medium heat.
  • Cook for 3-4 minutes, or until the onion is softened.
  • Cook for another 1-2 minutes, stirring frequently, after adding the minced garlic.
  • Stir in the brown rice, thyme, salt, and black pepper to coat the rice with the oil and seasonings.
  • Stir in 1 cup of the vegetable broth until the rice has absorbed the majority of the liquid.
  • Continue adding the remaining broth, 1/2 cup at a time, stirring frequently and letting it absorb before adding more.
  • The rice should be tender and most of the liquid absorbed after about 40-45 minutes.
  • Stir in the frozen peas until they are heated through.
  • Add the grated mozzarella cheese and stir until it is melted and creamy.
  • Serve the risotto immediately.
