  • Cook Time: 30 minutes
  • Total Time: 50 minutes

Instructions

  • Heat the olive oil in a cataplana or large pan over medium-high heat.
  • Sauté the onion and garlic until the onion is translucent.
  • Cook for 3 minutes more after adding the red pepper.
  • Combine the diced tomatoes, bay leaf, paprika, salt, and black pepper in a mixing bowl.
  • Cook for 5 minutes, or until the tomatoes soften.
  • Stir the rice in the pan to coat it with the tomato mixture.
  • Bring the fish stock and white wine to a boil in the pan.
  • Reduce the heat to medium-low and cook for 15 minutes, covered with the cataplana lid.
  • Cover the pan and cook the prawns and clams for another 5-10 minutes, or until the seafood is cooked through.
  • Remove the bay leaf before serving the seafood rice.
