Instructions

  • Bring the broth to a simmer in a large pot.
  • Melt the butter in a separate large pot over medium heat.
  • Cook until the onion is softened, about 5 minutes.
  • Stir the rice in the pot to coat it with the butter.
  • Stir in the white wine until it is completely absorbed.
  • Pour a ladle of the simmering broth over the rice and stir until absorbed.
  • Continue to add broth one ladleful at a time, stirring constantly and waiting for it to be absorbed before adding more.
  • The rice should be tender but still slightly firm to the bite after about 18-20 minutes.
  • Cook until the shrimp are pink and cooked through, about 2-3 minutes.
  • Stir in the pesto and Parmesan cheese until completely combined.
  • Season to taste with salt and pepper.
  • Serve immediately.
