Instructions

  • In a large saucepan over medium heat, heat the olive oil.
  • Sauté the onion and garlic for 3 minutes, or until the onion is translucent.
  • Stir in the Arborio rice until it is evenly coated in oil.
  • Stir in the diced tomatoes to combine.
  • 1 cup at a time, add chicken or vegetable broth, stirring occasionally and allowing the rice to absorb the broth before adding more.
  • Continue to add broth and stir until the rice is tender and creamy, about 20 minutes.
  • Season with salt and pepper to taste after adding the Parmesan cheese.
