Spanish Rice and Chicken Paella Recipe

Instructions

  • Heat 1 tbsp olive oil in a large paella pan over medium heat.
  • Cook for 5 minutes, or until the chicken is browned.
  • Remove the chicken from the pan and set it aside.
  • Add another tbsp olive oil to the pan, followed by the onion, bell pepper, and garlic.
  • Cook for 5 minutes, or until the vegetables soften.
  • Stir in the rice until it is well combined with the vegetables.
  • Cook, stirring occasionally, for 1-2 minutes, or until the rice is lightly toasted.
  • To the pan, add the chicken broth, white wine, saffron, smoked paprika, cayenne pepper, salt, and pepper.
  • Stir everything together thoroughly.
  • Bring the mixture to a boil, then reduce to a low heat and cover with a lid.
  • Cook, stirring occasionally, for 15 minutes, or until the rice is tender and the liquid has been absorbed.
  • Stir in the peas and cooked chicken until well combined.
  • Cook for 5 minutes more, or until the peas are heated through.
  • Serve hot, garnished with sliced lemon.
