Spanish Rice and Chicken Paella Recipe

- Add another tbsp olive oil to the pan, followed by the onion, bell pepper, and garlic.
- Cook for 5 minutes, or until the vegetables soften.

- Cook, stirring occasionally, for 1-2 minutes, or until the rice is lightly toasted.
- To the pan, add the chicken broth, white wine, saffron, smoked paprika, cayenne pepper, salt, and pepper.

- Bring the mixture to a boil, then reduce to a low heat and cover with a lid.
- Cook, stirring occasionally, for 15 minutes, or until the rice is tender and the liquid has been absorbed.
- Stir in the peas and cooked chicken until well combined.
- Cook for 5 minutes more, or until the peas are heated through.
- Serve hot, garnished with sliced lemon.
