Instructions

  • In a large saucepan over medium heat, heat the olive oil.
  • Sauté the spring onions and garlic until softened.
  • Stir in the Arborio rice until it is evenly coated with oil.
  • Stir in the white wine until it is completely absorbed.
  • 1 cup at a time, add the chicken or vegetable stock, stirring frequently and waiting until each cup is absorbed before adding the next cup.
  • Cook, stirring constantly, until the rice is creamy and tender, about 20-25 minutes.
  • Take the pan off the heat and add the Parmesan cheese, butter, thyme, and parsley.
  • Season to taste with salt and black pepper.
  • Serve immediately.
