Instructions

  • In a large skillet over medium heat, heat the olive oil.
  • Season the shrimp with salt and black pepper.
  • Cook for 2-3 minutes on each side, or until done.
  • Take the shrimp out of the skillet and set aside.
  • Cook for 1-2 minutes, or until the garlic is fragrant, in the skillet.
  • To the skillet, add the cooked white rice, parsley, cilantro, lemon zest, lemon juice, soy sauce, and butter.
  • Cook for 2-3 minutes, or until heated through, stirring constantly.
  • Place the rice mixture on one side of the skillet and the beaten eggs on the other.
  • Scramble the eggs before adding them to the rice mixture.
  • Return the cooked shrimp to the skillet and toss to combine.
  • Serve immediately and enjoy.
