  • Cook Time: 30 minutes
  • Total Time: 40 minutes

Instructions

  • Combine the rice and water in a medium saucepan.
  • Bring to a boil, then reduce to a low heat and continue to cook for 18-20 minutes, or until the rice is tender and the water has been absorbed.
  • In a large skillet over medium-high heat, heat the vegetable oil.
  • Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
  • Take the shrimp out of the skillet and set aside.
  • To the skillet, add the mixed vegetables, onion, and garlic.
  • Cook, stirring occasionally, for 3-4 minutes, or until the vegetables are tender.
  • Add the cooked rice, soy sauce, oyster sauce, salt, and black pepper to taste.
  • Cook for 2-3 minutes, or until thoroughly heated.
  • Make a well in the center of the rice mixture by pushing it to the sides of the skillet.
  • Pour the beaten eggs into the well and scramble until they are fully cooked.
  • Serve the cooked shrimp with the rice mixture right away.
