Instructions
- Combine the rice and water in a medium saucepan.
- Bring to a boil, then reduce to a low heat and continue to cook for 18-20 minutes, or until the rice is tender and the water has been absorbed.
- In a large skillet over medium-high heat, heat the vegetable oil.
- Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
- Take the shrimp out of the skillet and set aside.
- To the skillet, add the mixed vegetables, onion, and garlic.
- Cook, stirring occasionally, for 3-4 minutes, or until the vegetables are tender.
- Add the cooked rice, soy sauce, oyster sauce, salt, and black pepper to taste.
- Cook for 2-3 minutes, or until thoroughly heated.
- Make a well in the center of the rice mixture by pushing it to the sides of the skillet.
- Pour the beaten eggs into the well and scramble until they are fully cooked.
- Serve the cooked shrimp with the rice mixture right away.
