  • Prep Time: 20 minutes
  • Cook Time: 30 minutes
  • Total Time: 50 minutes

Instructions

  • Warm the chicken broth in a saucepan over low heat.
  • Heat the olive oil and butter in a separate pot over medium heat.
  • Cook until the onion and garlic are softened, about 3-4 minutes.
  • Stir in the arborio rice until it is evenly coated with the oil and butter.
  • Cook, stirring occasionally, for 1-2 minutes, or until the rice is lightly toasted.
  • Stir in the white wine until it is absorbed by the rice.
  • 1 cup at a time, add the chicken broth, stirring constantly and waiting for each cup to be absorbed before adding the next.
  • Add the asparagus after the third cup of broth and continue to add broth until the rice is tender and creamy.
  • Cook the shrimp until they turn pink, about 2-3 minutes.
  • Remove from the heat and add the Parmesan cheese.
  • Season to taste with salt and pepper.
  • Serve immediately.
