  • Cook Time: 20 minutes
  • Total Time: 35 minutes

Instructions

  • In a large skillet over medium-high heat, heat 1 tablespoon vegetable oil.
  • Cook until the chicken is no longer pink, about 5-7 minutes.
  • Set aside the chicken from the skillet.
  • In the same skillet, add the remaining tablespoon of vegetable oil.
  • Cook for 1-2 minutes, or until the onion becomes translucent.
  • Cook for another 2-3 minutes, or until frozen peas and carrots are tender.
  • Place the vegetables on one side of the skillet and the beaten eggs on the other.
  • Scramble the eggs until fully cooked, then fold in the vegetables.
  • Stir in the cooked rice, cooked chicken, soy sauce, salt, and black pepper until everything is well combined and heated through.
  • Serve immediately.
